I always finish Final Fantasy Adventure/Adventures of Mana with an inventory filled to the brim with Elixirs and I never use them even during the final battle.

No. Trails series taught me that you usually get more than enough over the course of the game to use what you need when you need it.
I usually just sell off my expensive healing items as the later Cold Steel games are balanced around selling off items for Mira generation.

I usually do save them the first time around. And if I play again, I may slide them. But I have noticed that when I tend to use them, I end up doing worse

It's not my fault, Illusions of Gaia was one of my first RPGs and there was a finite amount of all healing items, made me boss at Resident Evil though, especially the later ones where conservation is barely a concern. When my friend and I played RE5 in co-op we had more power weapons/ammo/full heals than we could even carry into the final fight.

Mine is the cheat one, but I didnt see that option before I voted. I might not need those potions, but I might run into an NPC that needs one! Especially in the Elder Scrolls series.

My friends gave me flack for hoarding random junk and having little to no inventory space in World of Warcraft. By chance, some level 49 trinket was actually useful for a level 70 raid encounter until the trinket got nerfed.

Anyone who grew up in the NES era hoards items: you could lose early in FF1 simply because you ran out of Pures or whatever early in the game. It's like people who grew up in the depression hoarding canned vegetables.

I've gotten a little better and will at least use items if I have 10+ of them now. But not if it's one-of-a-kind.

When I was younger yeah, eventually I got over it and started to use items more, I think I can attribute that in part to SMT games.

Generally yes, certainly until the final battle. Never know when you're going to need something.

However, if I can get more of it, then it's less of an issue.

Far too often, maybe my biggest weakness in RPGs. My inventory is often nearly maxed out with forgotten items I don't remember getting but I'm so hesitant to use them because I mIgHt ReALLy NeEd tHeM SOmEDaY!1!!

Sure, it's the final boss and I've got enough to fully restore my party 27 times over and still have a healthy buffer, but what if the boss has another phase and I really need them for that one? I'd better hang on to them, just in case.

In Adventures of Mana once you learn Cure, which is literally the first spell you learn in the game, you basically no longer need Potions or X-Potions, and as long as Fuji is with you, she'll cast Cure on you any time you want with no mana cost. And once you learn Heal you no longer need any restorative items except Ether, X-Ether, and Elixirs for restoring MP. And even those aren't all that useful because your MP and HP are fully restored every time you level up so unless you're really in a bind or you've been spamming magic you can just grind for a bit and get a free restore.

By the end of the game my inventory is full of keys and Elixirs that I never touch.

Outside of battle, I tend to just use a ton of cheap potions unless I'm near an Inn

In a battle, I'm more likely to use Heal magic
