it's just dumb to call real chinese food "unevolved" or "unimproved". if anything, american chinese food is a very very dumbed down version of it. less varied, less complex, less intense, etc than the real thing.

and it's actually really popular in many places, or getting there. there are plenty of historical/cultural reasons why authentic chinese food took a while to be appreciated in the US

So-called "authentic Chinese food" can really vary since China is a big-ass country. The cuisine from Northwest China looks nothing like the cuisine from Southeast China. Kind of like how when people around the world think of American cuisine they think about burgers and fries, but they don't really think about smoked brisket.

As to Americanized Chinese food, I'm Taiwanese and I don't mind it. Some of the dishes are more authentic than others (i.e. hot and sour soup is virtually the same everywhere). Some of them aren't authentic but they're still a decent meal. Some of them I don't like, but that's inevitable with any cuisine.

One dish I really do like from Americanized Chinese food places is pork spare ribs, cause it usually tastes pretty close to Cantonese char siu.

Even as an ethnic Chinese I don't really like all authentic Chinese food. Sichuan food is almost unrecognizable alongside Cantonese food, for example

Singaporean is 70% Chinese.if they are closer to Malay food than Chinese they wouldn't have pork and alcohol in them.

I went to to a Chinese family, who owned the best Chinese food place in town, for dinner once and the food they ate at home was WAY different than what they served at the restaurant. I was like 12 or 13 but I remember not really liking it. It was some kind of noodles and crab. I imagine nowadays as an adult I would have liked it but yeah the "American style" Chinese food definitely ain't authentic Chinese food

You're probably thinking of twice-cooked pork. Pretty good stuff.

The best cuisine I ever had in China was Xinjiang cuisine - delicious lamb kebabs and pilaf. There aren't really any Xinjiang people living in the US though - the closest cuisine I can find is Afghan cuisine, which makes sense cause the two regions border one another.

I'm also really partial to Shaanxi-style noodles but very few places make them in the US. There's a local chain in NYC called Xi'an Famous Foods and they make it, but the flavor isn't *nearly* as good.

You don't even understand the facts. Chinese immigrants had few job options to survive so they americanized their food even back in the 1800s so they could actually find work. It's also absurd to take that world view when other countries do in fact have authentic Chinese food.

As an ethnic Chinese person I like some of the dishes from Panda Express

I like the Orange Chicken, the Hot/Sour Soup, and the Lo Mein. Sometimes I'll go for the Beef with Broccoli as well

It might seem off-putting at face value (npi) but it's very worth mentioning that fish cheeks are to fish what brisket is to beef/bellies are to pork aka the creme de la creme of seafood... tenderest, most flavorful part of the fish

A lot of asian/ethnic food is adjusted for american/British tastes, whether this means removing a lot of spices, heat, flavour etc or just using salt, pepper and sugar to do it, maybe with some paprika to be exotic.
