I got all the ingredients yesterday and will be attempting this today.

2 heads of napa (ended up being 6 pounds)
Daikon which was hard af to find
Ginger
Garlic
Green onion
Maybe carrot but got some
Fish sauce
Miso paste since I couldn't find salted shrimp
Rice flour
Korean gochugaru pepper flakes

I've been looking at recipes for 2 days and can't find one that everyone agrees on so I'm just gonna take parts from a few and wing it.

Finding the ingredients was a lot of work. Hopefully the process of making it won't be as bad. There are no Asian grocery stores around here so I had to search for most of that stuff or get it off Amazon.

I like trying new shit so I don't mind.

Kimchi sucks by itself. Like if you eat kimchi in between whatever main food you are eating, it's lackluster

Kimchi really shines when you put it on whatever you are eating like a topping. It's the perfect food accessory.

Sauerkraut is the same way. I love that stuff with meat or mashed potatoes but by itself it's disgusting.

I'm fully prepared to be disgusted by straight up kimchi. Staying open minded though.
