Why doesn't Solid Snake consider himself a hero? He rejects the label every time someone calls him one.

Because he isnt, hes a soldier doing his job. He has the blood of thousands of people on his hands. Hes a killer, not a hero.

He's not proud of the lives he has taken. He's not proud of the people he's taken them for. All the efforts he made still failed, and the patriots took over the world.

But he obviously has a good sense of justice and wants to save the world. He wasn't blindly loyal to his CO like he thinks he is.

tbh, he starts being a hero before, during, and after MGS2.

before that, he was just a highly skilled soldier who did what he was ordered to, but he eventually found meaning in his life, and decided to spend his days doing what he could to help stop the threat of metal gears around the world.

anyway, I think maybe he doesn't see himself as a hero because he might feel like he failed in his mission - there's the whole war being a business thing in MGS4, and metal gear-like machines are pretty common on the battlefield.

Well, he was retired in MGS. The only reason he decided to join in to stop Liquid was because he trusted Roy and he wanted to save the world. He could have just said no. Sounds pretty heroic to me.

it's been a while since I've played MGS, but iirc, they tracked him down and forced/coerced him to do the mission

Yeah but where did it get him? Where did it get the world?

Also anyone who views themselves as a hero is fated to over commit to that to the point of doing something terrible.

That's the point though, you are meant to see him as a hero, even the in-game universe are meant to views his actions as heroic, but that's all just a side effect to Solid Snake who in his mind is just serving his purpose and completing his jobs. He's a "man" who is aware of his origins as a man-made creation who's sole purpose was to be a powerful soldier, and the human side of him hates that, so he's naturally not going to embrace the idea that he's a hero.

He was essentially a pawn of the Patriots prior to MGS2. It was really their status quo he was fighting for in his first 3 games.

Not considering himself a hero is part of what makes him a hero.
