The 2 i like the most:

-Just a super beast/animal minding its own business and you have to go find him and attack them. Emerald weapon is sort of like this but also if its an original monster in the wild with no story relevance.

-Take one of the first weak enemies in the game and either just change its color and call its (adjective) like "Black" rabbite or just "Level 99" and make it stupid strong.

-Random cameos are hit or miss.

Honestly, my favorite superboss is one that has abnormally-high HP, but doesn't have ridiculous party-annihilating attacks. I like a superboss fight to feel like a lengthy and satisfying slugfest between great warriors and beasts, and not just crossing your fingers that the RNG deigns to not wipe you out with the boss' superpowered attack before you can kill them in 2-3 turns with your own superpowered attack.

Trema from FF X-2 is one of my favorite superbosses in this regard; after dealing with the likes of Chac and Paragon, it was really nice to have a lengthy and (mostly) cheese-free brawl. Yiazmat from FF 12 technically fits this bill, but goes way overboard on the HP; something like Fafnir or Hell Wyrm from the same game is more my speed.

I guess i think its funny to take a weak ass enemy from the beginning of the game that never posed a threat and to just slap a cool palette swap and make him "Black/Evil/Angry" Goomba.

Especially if they do nothing to their size.

Or theres Joke enemy thats also super strong like hamsters from Valkyrie Profile.
