I think mechanically and storywise Metal Gear Solid is the top, but I do love me some Hitman (at least the newer games, since they are more forgiving than the older ones).

Splinter Cell, although Hitman is great too.

I was going to say Thief but you through in Deus Ex, so that's my favorite game you listed even if I dont think if it strictly as a stealth game like Thief and Splintercell and those are better in terms of strictly stealth. But yeah those Hitman is great too and I need to get more into Tenchu. Arkham is horrible at stealth, and MGS is fun but the only thing it has over the likes of Deus Ex, Thief, and Chaos Theory is its boss battles.

It has always been Hitman. That series got me into stealth games. I could wrap my head around 'social stealth' a lot more.

Then Splinter Cell is a runner up.
