What do you do about this feeling? I do have some gripes with the ending and a lack of closure in places but I think the predominant issue is the excitement being over and the unique feel of being so invested isn't coming back.

I was starting to this was lost to me and I've become less acclimated to it, it'd been so long since a singleplayer game, especially one with an emphasis on story managed to immerse me like that. That kind of game's obvious glaring weakness is once you know the story a lot of the magic is gone on repeat playthroughs. It's over now and I feel sort of like I'm just kicking a can down a street and it keeps rolling off to the side more than going straight. Is it best to just sit with it for a while and hope it fizzles out?

If the game has a newgame+, the sadistic glee of a curbstomp run is way more fun than the first time through anyway.

This is normally true but while I was playing I felt this creeping up on me. I didn't want it to be over so I did every side quest I could find until I was down to truly monotonous ones and was lapsing from being lead by legitimate immersion into madly scraping away trying to uncover more. I was max level for a bunch of quests, a few superbosses and the final boss fight barely had enough in his speed stat to land a hit. My character might as well have walked up, pointed while exclaiming "Look! Behind you!" and then while the final boss turns my character just takes his batteries out and pushes him over.

I've already had a good taste of powertripping in this game and really it feels like being hideously overlevelled in any other game. You know you're going to win easily and then you do. Little novelty to it.

That fits the bill. I had a joke something like "Oh well this guy only just turned up at the very end and I've been plugging away for over 100 hours, only makes sense I'd trample this noob." but it didn't really align with the game lore.
