That could mean a few things. That theyll literally die, that the forest will stop protecting them (dont think its ever stated theyre immortal) or they will begin to age if they leave.

You're messing up the terminology.

A killed ghost gains a "ghost level," an additional point of removal from the living.

You automatically recognize this by how many times you stutter when you see them and yell "Ghost!" G-ghost for level one, g-g-ghost for two, etc.

You'll notice that Shaggy, for example, rarely encounters a spirit lower than level 3 or 4, but he is a very experienced practitioner.

Even if we assume they are ghosts, I don't really have issues with Ganondorf killing a ghost. The issue is a ghost of a ghost.

You have to stretch the facts and assume so much to believe that OoT's sages are dead. Darunia, Impa, etc don't show up in their dungeons and temples because the game was made on the N64 and Nintendo didn't want to have an NPC with you. The twin Gerudo explicitly plan to keep Nabooru alive. They show up alive in the ending.

Most likely what happened is they died. Then they became spirits. Somewhere between the living world and the dead, which awakened their powers, and made it so they can't leave the temples for long. Would explain why they live for so long too.

Thats why they can still "die" and become ghosts.

And i don't know why people find ghosts dying so difficult to believe, you kill ghosts in almost every game..

Upon becoming a sage, in becomes klear they don't need to fight monsters/bosses/etc. The chosen hero kan handle it. They have important roles that only they kan fulfil, and thus they teleport to that temple in the Sacred Realm where Rauru awaits.

Great question! I'll have to get back to you on this one, as it's been a while since I last completed the game. I recently began playing again on the Nintendo Switch but I'm only up to the third temple as child Link. I also remember there being one section with an underground area that leads to a well. Wonder what that was used for. @Ving_Rhames

The sages in OoT had a different job than the sages of WW.

The Earth and Wind temples aren't even a thing in OoT. Those two temples are meant to bless the MS, which was not necessary in OoT.

Also like pointed out earlier by someone else, the OoT sages are referenced in the Castle.

I won't argue whether or not the sages are consistent, but in the instance you presented it definitely is consistent.

They're unambiguously dead. Just shy of getting killed on-screen. And have been dead for 100 years. Hell, Link himself almost suffered the same thing. The game itself begins with Link, 100 years later AKA present day, finally fully recovered while Zelda for that century has been barely keeping Calamity Ganon at bay and even then it's implied she's losing.
