The trick is to pull the tray half out then stomp the end hanging out. Sometimes in Iron Chef or Chopped finish early, but only saw it a few times.

While it would make sense for them to use every second to do what they need to do, these shows are -extremely- heavily edited. Like, what the judges in Iron Chef eat isn't even what we see cooked.

I'll just have to take your word for it. It seems like the biggest barrier is that this conversation is super vague and we could be thinking of completely different types of oven and pot dishes. Im thinking that it's a dish including cooked sides, which would be impossible to plate in 10 seconds if you don't even have the main dish on the plate yet.
