Christmas is kind of a glutton in that regard. Die Hard, Lethal Weapon, First Blood, Batman Returns, Shazam, etc.

Should other action holidays get action movies of their own? New Year's honestly seems the least likely. If anything, you're going to set the movie on New Year's Eve. Maybe have the bad guy die just before midnight and then have the hero kiss their love interest as the ball drops. I guess that's technically New Year's.

(That's not the ending of a specific movie. So no spoilers in the off-chance that there is a movie to end that way.)
