Breath of the Wild and Elden Ring not overloading you with checklists, markers, and popups is actually pretty respectful to the player.

What isn't respectful of your time is Ubisoft churning out their hundreds of towers and outposts all over the map. "It respects my time." No, those games are in themselves a waste of your time.

This is the reason why a lot of the core audience hates it when other players come into games like the Souls Genre and demand the game be easier or change certain things.

If they had it their way, the game would be totally different. Just as Jason Schreier says, the quest log would make this game feel totally different. But including it would appease a lot of these people complaining.

Or I could be wrong and these are just the core base whining as well, except Souls games never had a quest log from what I remember.

I'd imagine that this game is pulling in more players that don't necessarily know about Souls games because it's not actually I'm the title. Even my wife was drawn to it because "it looks similar to Skyrim". Had to explain how differently it will actually play.

Give it a few weeks. Somebody will have made an APK for mobile (website for PC) that lists every single NPC, item, boss etc. in a clear and concise checklist that you can filter through to 100% your playthrough. There's one for every other entry in this series.

Lord yes
God I hate big blinking arrows and waypoints in these open sandbox games. Yes in many of them you can turn off waypoints, however usually the game isn't built around that idea so you're not usually doing yourself any favors. Whereas a game built up from the bottom without these tools usually have great ways of helping you learn how to orient yourself without them.
