This is a tough question, because cheese has so many uses. Parmesan is so useful for cooking and topping. You could get rid of every other cheese, and as long as you have parmesan, life would be good. I feel like I have to vote that. I like Provolone the best on sandwiches. Swiss is really good for sandwiches, as well as eating plain. I think I'm most familiar with American cheese, which I like. However, I like a few other kinds of cheese, too, such as cheddar and mozzarella. I think it mostly depends on the food.
