I'm lazy as fuck and make quesadillas for dinner sometimes. It's been a while though and my package of tortillas is about... a month expired. But to look at them, I don't see any blemishes or mold or anything, and they're still soft and pretty normal looking.

As long as they're not hard they should be good.

Expiration dates are often a formality...it depends on how you store the food and what it is. I ate a can of beans a couple weeks ago that expired in 2017 and they were fine

Did you open the pack to feel them?

Yeah it's just to give the store selling it an idea of when they might get hard and stale and should be removed from sale, it's not some guarantee they are bad.

If they still feel, look, and taste like they should, they're fine

Well, I took off work Monday so even if it makes me sick, I guess I have an extra day to recover. That's better than just eating plain chicken tenders, right?

Expiration dates are often overzealous, but I find tortillas mold pretty quickly.

Like others have said, if theres no mold, then they are still edible.

I don't think I've ever seen a tortilla mold. I mostly get the corn ones though. They just turn into small frisbees when they go bad

Realistically there's going to come a time when the alcohol overrides the rational thinking and I make a quesadilla anyway. We'll see if it kills me or not. I'm not sure what outcome I'd prefer.

Turned out okay. Tasted as good as any other time I've made a quesadilla and I don't feel sick or anything. I drunkenly left my ranch sauce out overnight though :(

1st world countries tend to go overboard with food hygiene. In Africa people can eat fish and bush meat that's been sitting in the sun for a couple days at the market. Gotta build your tolerance up

As with pretty much anything, if it smells fine and looks fine it's fine to eat. There may be some staleness or other degradation of quality but you're not going to get ill.

I'd recommend eating a lot more of them real fast and just finishing the package before they get even older

I keep my tortillas in the fridge. I finished a pack that was probably 3 months old or so making breakfast burritos this morning. Also used expired eggs, an old onion, and chorizo that had been in my freezer for the better part of a year.

Actually wasn't that much worse than if it was made with fresh ingredients.

Corn tortillas: they should be fine, provided no mold. Worst issue is staleness

Flour: belong in the garbage regardless of date
