You want to get used to shopping and cooking for your new diet and it will be hard to do that if you're only doing it for just one meal. If you're just doing it for that one meal, you'll never get an understanding of the cooking and shopping and not be able to understand how to scale it up. Planning a specific diet for one meal a week is harder to me (leading to discouragement) than planning a specific diet for multiple meals a week. Do the meat dinner once or twice a week, with the rest of the week being meatless. But it can be done They kill me in the prison. B12 isn't that hard to keep up anymore, only because it gained such a reputation as the "tough to get" nutrient for vegans that now it's fortified in just about everything Iron and the Omega 3 fatty acids are harder to get..it's a good idea to keep Flax handy because Flax has a lot of nutrients that vegans otherwise struggle to get. ... I remember I went on to r/Vegan once and got chewed out when I said being a dick wasn't a fundamental part of being a vegan. I was told that the single most important part of being a vegan was the holier-than-thou douchery and otherwise I didn't really count, I was just "plant based" and wasn't good enough. ...
