I still can't fucking make the coating stick to my chicken, but it is skinless.

Then I had to go empty out the bowels... and I'm pretty sure what I just did was bigger than our first kitten.

I soak in seasoned buttermilk for about a day, then I drain the excess off with a cooling rack, dip it in seasoned flour, to an egg wash, and then to a panko crust.

I have tried both whole eggs and just yolks. Today was whole as I didnt feel like separating them.

My gooch is never that dry.

I have two more thighs for tonight so Ill see what I can do. The buttermilk is very thick.

I'm sorry, but you go to that much trouble for the chicken but then skimp on then potatoes, monstrous.

Granted the weather and availability has left me cooking with premade potato patties recently.

Butter milk flour (add your own choice of herbs, spices etc) and corn starch is what I use when I fry chicken for crisp crunchy skin and juicy meat. I use canola oil for the cooking.

I deep fry chicken in oil that's about 350 degrees. I use roughly 3 cups of flour for a whole chicken but you can add about 1 cup of corn starch and use 2 cups of flour.
