Trying to wrap my head around the Eucharist.

So the bread and wine becomes literally Jesus. But its still bread and wine. But its also Jesus.

So...Jesus is made of bread, then? He's like Anpanman?

my family's from east Africa, and my dad told me that when missionaries initially came, it was difficult to convert some people because they believed that Christians were actually cannibals.

It's human flesh that looks and tastes like bread. That's the answer the Catholic Church gives. It's based off of Platonic philosophy's idea that what something we experience through our senses is not the same as what something truly is independent of our senses. The terms are "phenomenon" and "noumenon."

So technically according to the Church's own logic, its members partake in cannibalism.
