I think in particular the newer ones are funny because those x ray moves would kill you or paralyze you easily but they just keep on going like nothing

On the ps1 Squaresoft had 2 games that dealt with this. Bushido Blade 1 and 2

You could take damage in a fight and carry wounds over to the next fight. Serious wounds lasted the rest of the game. Like if you lost an arm

I'm still sad they never made Bushido Blade 3

Kengo series is pretty much the spiritual successor to Bushido Blade. It was made by the same company as BB 1 & 2.

In fact the original Kengo: Master of Bushido was planned as a PS1 game but it never released.
