I literally make cookie dough from scratch and then just eat it. It's what badasses do. So, to answer your question, yes.

E. coli from the raw flour is actually a greater risk than salmonella from the egg. Either way, though, the risk isn't terribly high, just high enough for the manufacturers behind the products to want disclaimers to avoid being held liable.
