I just picked one. I picked Stay/Night. Are they related to each other? Or are they completely different stories?

Fate/stay night is a visual novel with 3 routes. 2006 is sort of a mix of 2 routes. It's mediocre. The 2013-ish Unlimited Blade Works anime is another route. It's quite good. There are three movies depicting another route, Heaven's Feel. They're good. None of them will give you the full story, so you're kind of jumping into the middle of the pool unless you read the VN.

I've watched several animes in the Fate franchise, and I still feel like I've barely scratched the surface

with Fate you kinda just gotta jump in somewhere and start watching

fate zero is more about the gritty competition
the other fate series seem to be just the usual harem anime

Fate/Zero is great, Unlimited Blade Works looks nice because ufotable, and skip the rest of the series.

fate/zero is a prequel to the three stay nights (stay night, unlimited blade works, heavens feel), which are three different routes that the original VN story can go. There is also a little spinoff show I can't remember the name of that is like a light fluffy thing about the characters hanging out and Artoria eating food

The Case Files of Lord El-Melloi takes place between Zero and the Stay Night animes.

Those form the big core story of the series. But beyond them there is also:

Fate/apocrypha is an alternate universe story that uses the mechanics of the fate universe in a different setting with a different setup.

Kaleid liner Prisma Illya is another alternate universe, but it uses characters from Stay Night and focuses around Illya becoming a magical girl.

There are anime adaptions of the Camelot, Babylon and Solomon arcs of the Fate/Grand Order gacha game.

Lastly there's Carnival Phantasm and Grand Carnival, which are parodies of Fate (and Melty Blood) that probably shouldnt be watched until you consume a good amount of the media because it's full of weird in-jokes.

You should have started with Kaleid liner. Thats the sink or swim moment.
