I think 8 and 10s main quests are relatively easy. So Ill assign 8 and 10 to both of them.

In 8 you can easily break the game by not leveling up + having good junctions. Can do this as early as Disc 1.

In 10, having all Aeons in overdrive before each boss fight can take off a good chunk of the boss HP.

Itll take some (maybe a lot of) explaining to make this work, but hell for a million dollars why not.

Do glitches and abusing certain mechanics count as cheating? I mean it'd be really nice to be able to set them up in games with easily abused mechanics like 8 and watch them blow through everything thinking they're some sort of video game experts

Although staying at low level makes the game "Easier" I wouldn't say it's as easy as 9 or 10. Since enemies still level with you and you have to go out of your way to stock up on magic or stay at low health to abuse Limit Breaks

I think a first time player would still die a few times

Yeah 8 can be hard for those who don't wrap their head around junctions right away. To me it looked confusing so I didn't bother and tried bulldozing my way through the game using summons as meat shields. Almost beat the game too but it was a struggle. Yeah once you get the hang of junctions games easy. But I felt 9 was easier. First playthrough I never died.

Overall all I say 7 and 9 are the easiest. 7 cause you just get some overpowered materia set ups. 10 I struggled with a boss or two. Mostly because I was used to just strong arming my way through rather than using strategies like using reflect or having status nullify equipment.
