Bison meat seasoned with garlic power, salt and pepper. Red kidney beans, yellow onions, a whole habanero pepper, three jalapeo peppers, and a whole red bell pepper. 1 yellow onion 1 green pepper a few cloves of garlic 1 tbsp tomato paste concentrate 1 jalapeno 1 lb 90/10 ground beef 2 28 oz cans diced fire roasted tomatoes 2 cans beans of choice (I ususally use 1 kidney 1 black) chicken broth or 1 can dark beer a few squares dark chocolate chili powder, cumin, smoked paprika, cayenne, garlic powder, black pepper (add or remove spices as desired) brown the beef in olive oil, adding chili powder near the end to coat and toast it fry the onion, green pepper, jalapeno in olive oil until softened, add garlic, tomato paste concentrate, and some of the spices for the last couple of minutes add everything else except the chocolate along with enough chicken broth to thin it out, if using beer instead add the whole can simmer until it reaches the desired thickness, at least half an hour (I usually try to do at least an hour and a half). add the chocolate near the end add salt and more spices to taste, I usually end up adding a shitload more spices this makes 5-6 very generous portions of chili --- "life is overrated" - Seiichi Omori 01001100 01010101 01000101 00100000 00110100 00110000 00110010 ... I have one of those huge canning pots and I like to fill it right to the top when I'm making chili. I think last time I used ~2kg of beef to make it. I go all out: carrots, onions, celery, corn, mushrooms, leeks, bell peppers, hot peppers, basically anything I see that makes me think "that would be good in a chili." sometimes I use multiple kinds of beans too, in addition to kidney beans. I've made chili with pork instead of beef before. still good, but not as good. usually use some beef broth. I've put barley into the mix as well. it's pretty good, but not necessary I also usually use a mix of diced and crushed tomatoes. next time I make it I'm gonna go heavier on the spice I think -- I generally eat it with something else, like rice or pasta, or as part of a chili mac & cheese, so the spice gets quite diluted over the whole thing --- http://error1355.com/ce/averagejoel.html ... Yeah I feel like chili is hard to fuck up because a lot of it is personal preference after the meat and beans. I've never actually thought of getting bison for chili, that's a great idea. My usual recipe: Ground beef or turkey 2 cans of mixed beans (kidney black and pinto, Costco usually sells em) 1 can tomato paste 1 can diced tomatoes 1 white or yellow onion 1 bell pepper 2 or 3 canned chipotle peppers in adobo sauce 4 or 5 minced garlic cloves Maybe 1 or a half cup of beef broth if I wanna thin it out a bit Smoked paprika Chili powder Cumin Chipotle powder Salt Pepper Can't go wrong, always hits the spot --- The Legend is True! ... I cheat. Store I go to has this "TexMex" style pouch of chili powder that I get. Toss that in with 2-2.5lbs of meat (I'll do half and half of like just normal beef and then some spicy Italian sausage or something) 1 can of kidney beans and then a little beer to get it the thickness I like, so I prefer a thiiiiicc chili. --- Rage is a hell of an anesthetic. ... I made the best chili I ever had a couple weeks ago. I usually play it by ear but this is what I remember putting in it: 3 lbs ground turkey (the darker meat, not breast) 1 pack diced andouille sausage 2 large cans of kidney beans 1 small can of black beans Onion, bell pepper, celery, garlic 2 cans stewed tomatoes 2 cans Rotel original tomatoes A jar of Ortega chunky salsa Better than Bullion beef broth (added until I liked the consistency, maybe 3 cups) Chili powder, cumin, smoked paprika, salt, pepper (just threw some in until it tasted right) Cooked the vegetables in olive oil with the sausage. Removed and browned the turkey. Then threw everything in the pot and let it simmer on low for a couple hours.
