Pretty much this. Salt and (usually) pepper are pretty much mandatory in anything savory. They aren't exactly exciting, leave them (or something that contains them, like soy sauce) out of just about anything, and it doesn't really matter what else goes in there, it's going to taste lacking. Discounting those (which we probably should, given that they're such defaults), onion and garlic also show up in almost everything I cook, so I'd say they have to take it.

Yeah, anyone who says anything other than salt is fooling themselves. And pepper/garlic/onion aren't far off.

Among the less common spices...let's say rosemary. That is often a nice surprise in bread/fries/etc.
