Yes, but it isn't guaranteed money, and its tricky. You aren't always guaranteed 200 dollars. It just depends on the party that is dining that night. One party may order 700 dollars worth of food, another may only order 80, and not all of them tip. And that's assuming the person is even busy. You may go hours without customers or a customer in your area.

It depends on the restaurant. I've heard some restaurants that split tips with the line cooks. It's still a 90/10 split in favor of the server, but with everything else that goes into calculating the tip your still losing money. Not to mention that the moment something is counted as part of your "hourly wage", then you are required by law to report that to the IRS.

If it's not guaranteed then what's the issue here? It's not a given that you should make the top of the wage scale every single night, and for this night in particular she still made $35 an hour. Seems like no matter how you slice it this waitress still ended up making out like a bandit in the end, her whining about only making $35 an hour instead of making $70 an hour is indeed the height of privilege.

I've heard of this but never actually seen it in action. No restaurant I've worked at has done this and I would never be a server at one that does.

When I served tables some places(especially the ones where people would spend that kind of money) require the server to tip out support staff/bartenders.

So that $70 could easily be more like $35 after tipping out. I wouldnt take to social media about it but I definitely understand why she would be annoyed.

For example if the state minimum wage is 7.25, the local grocery store cashier is required to be paid 7.25/hour. The waitress is required to be paid that as well if tips are short.

There's a wage waitresses are paid IF they are tipped. Once again, if tips are short, employers are legally required to be pay whatever the difference is at 7.25/hour.
What that means is a waitress who worked 40 hours would legally expect at least $290 either from her employer or from tips.

Yet, people like you keep believing this misconception that they can legally go home with less. It is literally illegal to pay less. Once again this massive misconception that "if you don't tip the waitress, they will legally get paid less than minimum wage" is not true.
The misconception that it's the customers responsibility to make sure they're paid more than minimum wage is not true. Nor is the service industry entitled to a tip.
Lastly, the misconception andor attitude that the service industry is the only ones suffering is a massive misconception.

You are more than welcome to place these people on a pedestal. You are more than welcome to tip them if you want to. It doesn't change the above that so many keep falsely believing.

Every once in a while a post like this goes viral and either the customers get publicly shamed for being stingy, or the server gets shit on for expecting too much. And then anyone who dares to question tipping culture gets hit with some form of "well clearly you hate the working class and you just want servers to starve in poverty huh". It's just toxic all around.

It makes a lot more sense to be transparent about expected price beforehand, just like how we handle every other transaction. Either up the prices of the dishes or have a standard percentage added as a service fee (and communicate this clearly to customers). Why keep the expectation implicit and then get mad when that expectation isn't met? Even the Americans ITT can't seem to agree on what's an acceptable tipping amount.
