With stealth as an option but allowing a ton of different methods of play and with a lot of extra details

sounds like you want to play the hitman series.

This is not a popular take, but I think Watch Dogs 2 and Legion are pretty solid if you approach them as stealth games.

outside of setpieces/bosses, you can stealth your way throughout much of the game, similar to the MGS titles.

Yeah it's overall a dying genre unfortunately. Especially spy type games in general.

Dishonored definitely came to mind and is probably the closest. Also need to try Deathloop, im sure it's different but after learning Arkane did Dark Messiah I will play anything they put out

We most likely could've had MG1 and MG2 (MG not MGS) remakes by now if Kojima's dumb ass and Konami's incompetent asses didn't fuck up during MGS5

metal gear really destroyed the concept of stealth
The two new deus ex games hr and md can be done like it too
deus ex and deus ex (that shall not be named) can kinda be done in combat but the engine is terrible for it

It's mostly the act of social stealth. So finding the right disguise that gets you access to the right areas. It's pretty unique.

I've tried splinter cell so many times and I just can't get into it no matter how fucking cool the games are

Yeah thats fair. I got 3 from a library after the new update and I'm gonna have to put a LOT of time into it. Games are genuinely great.
