Captain: Benjamin Sisko. He is a strong leader who can handle any challenge, from the Dominion War to the Prophets.

First Officer: William Riker. He is loyal and capable, and he respects the captains authority.

Security: Worf. He is a fierce warrior who values honor and duty. He often gives good advice that others ignore at their peril.

Medical: The Doctor. He is a holographic program who can treat any injury or illness. He also has a strong sense of ethics and refuses to harm anyone. Janeway wanted him to kill someone and he was like No you monster.

Science Officer: Jadzia Dax. She is a brilliant scientist who has the wisdom of seven lifetimes. She is also adventurous and fun-loving. Okay logically you know who it should be, but I am still not a fan of Elves , even space elves.

Engineering: Geordi La Forge. He is a genius engineer who can fix anything with his visor and his tools. He is also a loyal friend and a kind person.(Expect on episode, but with long running shows you have forget crappy takes )

Navigator: Mr. Sulu. He is a skilled pilot who can navigate any starship or shuttlecraft. He is also a brave officer and a talented swordsman.

-Kirk - He's Captain freakin Kirk.
-Spock- He's Spock (changed my answer)
-Worf - He's sort of the designated jobber of the show to make the threat of the week look good, but that's just TV. He's very capable and perfect for the role. As mentioned, he does bring up good points, but are shot down.
-McCoy- I feel he's the best mix of professionalism and general likeability. Plus he's funny.
-Data. - Can't beat having an android who can make various calculations in his head in milliseconds.
-Geordi - Always capable and seems to be great with subordinates and fellow crew members. He's a guy you'd love to serve under.
-Sulu- as already mentioned a great pilot and a great officer in general.

Captain: James T. Kirk.
First Officer: Riker.
Security: Odo.
Medical: Leonard "Bones" McCoy.
Science Officer: Spock.
Engineering: Montgomery Scott.
Navigator: Pavel Chekov.

Captain: Picard. Level-headed diplomat/philosopher/archeologist/scientist who manages to get the job done while respecting the rules/guidelines (at least more than the other captains do).

First Officer: Chakotay. Aside from the inaccurate and imo unnecessary native American background, I find him to be the most professional and dependable first officer of all, who actually backs up any objections he might have to captain's orders instead of just emotionally barking like Riker/Kira/Trip.

Security: Tuvok. Calm, talented, experienced and Starfleet through and through. Also good sense of integrity and proactivity.

Medical: EMH/The Doctor. Someone whose programming and personality grows over time (and pretty much the only Voyager character who had actual character development). Nuff said.

Science Officer: Spock. Perfect blend of vulcan and human insight and knows how to critically read between the lines.

Engineering: La Forge. All-round he simply has the best combination of skills/professionality/personality/insight of all chief engineers imo.

Navigator: No really jumps out, but when it comes to pure piloting/navigation skills, I'd say Tom Paris. Not sure if I could put up with his rebellious streak though.

Best crew as in best characters or best at the job? It's the same for most...

Security: Worf on Tactical, Odo for ship/station security
Medical: The EMH
Science Office: Spock I guess
Engineering: Scotty
Navigator: Tom Paris
Ops/Comm: Data
Food/Drink: Quark

If it was best characters, make McCoy the doctor (barely) and replace Scotty with Trip.

Captain depends on what we're doing. For typical Starfleet business, Picard. If we're at war, Sisko.

First Officer: I think Riker is probably the most qualified but I'm hesitant to put him because I think he's kind of an asshole. Maybe I'd also go with Chakotay.

Security is Worf. No question. Maybe with Odo backing him up though.

Medical is the EMH but only if it's late-Voyager EMH.

For Science Officer. I'd actually say Janeway. I think she was probably a better science officer than a captain.

For Engineering, I have to go with Geordi, but it's a close race with Miles. Miles is probably better as an actual mechanic, but Geordi has more experience dealing with weird shit space throws at you. With Miles, you also have the aura of horrific luck following him, so best to keep that off the ship.

For Navigator I'd maybe go with Data. No organic species is going to be better at piloting than him. Wesley does have his loli magic though, so that's also a consideration.

I don't dislike The Doctor, but keep in mind that (DS9 spoiler) the first choice for his model was Bashir, who was disqualified for being literally too smart

That was the LMH, a hologram designed for vessels that didn't really require a full-time medical officer. Bashir was also not rejected for being too smart, he was rejected because they discovered he was genetically enhanced.
