At my 2nd job I bartend and serve. We just make sure the plants stay compliant with the policies they set forth when they agreed to USDA inspection. The plant I just changed to last month does about 80% of their chicken for Chik-Fil-A, and 20% for KFC. A lot of their standards when it comes to metrics the government requires are more stringent, so its actually pretty easy to keep them in line. The smaller mom and pop slaughters are unfortunately the ones you have to watch for. Their profit margins are generally a lot tighter so they really try to get away with using product that we condemn, or skirt the rules to keep production going.
