It's mostly the sodium ions that do the preserving, by virtue of creating a hypertonic environment that sucks the water out of anything that tries to grow there. Chloride ions also contribute, but sodium is the main one that organisms use to osmoregulate.

My girl made a homemade chicken pot pie once. She's a hell of a cook/baker, so the next time I tried one of those Marie Calendar frozen pot pies I nearly tossed the thing in the trash.
