The only good thing I can say about Uri Geller is that he, recently, realized how dumb his lawsuit/complaints to Nintendo over Kadabra were, and he not only took back his complaint, but basically told Nintendo "Please start making Kadabra cards again, I was a complete idiot."

It's fun party tricks and honed technique, if not outright trickery.

Most common is just people are good cold readers using tried and true methods, or they set up microphones around the audience to get tidbits of info they can use later in the act.
