Homer and Marge are supposed to be in their mid 30s. When the show first aired, this would have put them born around 1955. Now it would put them born around 1987. Have references to their younger years changed to reflect this, or are we just supposed to suspend our disbelief and accept that someone who was a baby when The Simpsons itself first aired was also a teenager during Woodstock?

It's definitely a sliding timeline. There was a somewhat recent episode that had a flashback to them in high school and referenced Y2K

I don't watch the series but I do know they showed Homer as a teenager in the 90s in one episode:

I mean I know characters in cartoons almost never age, and you'll see characters be the same age through like 8 Christmases or 3 presidents, but this is such an extreme example of one lasting so long that at this point the adult characters would have been young children at the point in time when the show first aired that I'm curious as to how they handle it.

Yes, and 13 years before that they did an episode with Homer and Marge as young adults in the 90's.

That said, they mostly avoid placing timelines on characters' pasts these days unless it's a major part of the story.
