Its cool outside and I bought my supply and got some Guinness and making a day out of it. Any others from Louisiana here?

I do like gumbo, but I prefer jambalaya so much more. I'm not from Louisiana but I make a mean jambalaya.

I've never been a fan of anyone's jambalaya but I think its because I have a slight aversion to pork. The seasoning is usually not my favorite either. I also have a bias towards soups and stews though.

Plus its the perfect time when it gets cool outside which is usually when everyone's making it and I mean EVERYONE. There was almost no chicken left in the supermarket and I saw everyone's baskets all having similar ingredients lol

Yeah I'm sure when the weather finally changes people want to jump on it. Like where I live and Fall hits you see people make a pot of chili almost immediately as the first cool Fall weather hits.

As for my jambalaya I do use andouille sausage so there is pork in it but I tend to make it seafood heavy even if it is not traditional. I put in shrimp, scallops, and I'll even add in some oven baked fish to the dish to make it very meaty and seafood forward.

Funnily enough, I've never had seafood in jambalaya. I think its because no one here does it. I think that's more of a creole thing that Eastern Louisiana do. I live in the western side and nobody I know does it that way lol. They also add tomatoes in theirs I think. I always think about going to New Orleans but never do.

Not from Louisiana but I love making gumbo. I make it every other weekend and eat the left overs for the next 3 days. Usually chicken, andouille sausage, and shrimp. Used to do crab but it's gotten to expensive.

I never like seafood in my gumbo. My grandmother likes to make an okra gumbo too but I don't like okra so she always used to make me my own special pot.

Its only gonna be in the high 70s here tomorrow so Im gonna soak that up as much as I can. Gumbo sounds nice though.

Lol I can't stand okra gumbo. I do my seafood a bit different. I marinate my shrimp in liquid crab boil, some lemon juice and a little homemade cajun seasoning. Adds a flavor that is amazing to me. My grandpa loves build eggs in his. I got my recipe from him but I made tweaks to it over the years ro make my own version. That was really sweet of your grandma! I've never had it with chicken gizzard though. How is it?

Pretty good if you like gizzard. Adds some flavor but not a lot to the actual roux.

I'll have to try it sometime then! Totally agree on that. The texture of okra is awful and it's way to slimy. The taste of lemon juice and cajun seasoning always tasted great so I figured why not mix it with some crab boil and see what it does. I've been doing it ever since lol. Tastes good in jambalaya and by itself too.

I usually get some crab boil seasoning and boil it with some potatoes and mix some crawfish dip with ketchup, mayo, mustard, Worcestershire sauce, and Tabasco sauce and dip it. So good. Basically something to hold me off until crawfish season.

And the okra gumbo they make isn't slimy or anything but its all the little seeds and stuff in it and the okra overpowers the gumbo. I wonder if its because they put too much because sometimes I'll be told that someone put it in and I can't tell but in my family, they just stuff their gumbo with it and I just *gags*

That reminds me of my mom's poker run. There was a huge vat of jambalaya just sitting there and I was going upstairs to the bar and all I could think about was pulling a Joker and just diving right in it.

nice. It was cool yesterday and I've heard so many customers talking about making gumbo yesterday lol. Guess I wasn't the only one. Came out pretty good, I think

I know people prefer a thick stew but I like it pretty thin and it still carries a lot of flavor. I'm more of a 'soup' kinda guy. Plus the day after is when all the flavor just expands and it tastes so much better.
