What is fried rice syndrome? Recently, this type of food poisoning with an ironically delicious-sounding name has entered the spotlight after a death 15 years ago due to fried rice syndrome resurfaced on social media.

The condition started gaining traction on TikTok after user @jpall20 posted a now-viral video highlighting the story of a young man who died after eating five-day-old, unrefrigerated, leftover pasta.

"For all the students and meal preppers out there, do not make your food, put it in a Tupperware, and then leave it on your counter for a week," the user warned.

The real danger is rice.

You have to refrigerate it straight away, and you shouldn't leave it more than a day if you want to be absolutely safe (you'll probably get away with 2-3 at most). And make sure it's properly heated through, if you don't want stuff coming out of both ends later.

Yeah, this is why I'm overly paranoid about food safety. If I cook rice in the cooker, I won't eat it if it's left out for longer than 2 hours. I generally leave it on the counter long enough to cool down and then I put it in a container and straight to the fridge.

I know several people who will eat rice that has been left out for a day and...while they've been fine, it's just not worth the roll of the dice to me.

I don't think its particularly likely just like you probably won't get sick from undercooked meat most of the time... its just supposed to be one of the worst food poisonings when it does happen. If you are going to gamble on yourself at least you aren't serving it to others which would be the more negligent thing to do.

The toxin is like a chemical yes (called Cereulide if my surface level research is correct), produced by a strain of bacteria called Bacillus cereus. The poisoning comes from the chemical the bacteria make, not necessarily the bacteria themselves

Even cooking rice leaves the bacteria bacillus cereus which thrives after you make it cause it grows in warm and moist environments and can grow exceptionally very quickly.

also even in the fridge 5 days would be a bit too long,if i had 5 day old spaghetti in the fridge i would examine it to see if it was fine
