We only ever see them interact with planets that people are living on. It's not like Star Trek, Star Wars isn't about exploration so we go places that are already established. There's no narrative reason for us to see planets that cannot support life.

Coruscant was a nice nature planet before all the construction. Tattooine had grass but a disaster of some kind, possibly a weapon being used, ruined the environment. Some theories are that Sandpeople are actually human or close to it, under their clothes

I figured that was because they live out in the boonies with relatively little contact.

Need something to protect from sandstorms and sun, after long enough it becomes cultural.

Although there was play for a while of two subspecies of Gand, those that didn't need to breathe, and those that breathed ammonia. I think it was Stackpole who introduced non-breathing Gand and may have done so accidentally. That's Legends continuity, but then in current continuity a SINGLE source has mentioned that some Gand don't need to breathe and now it's all dubious in terms of canonicity.

It's still established that Zuckuss needed a mask and breathed ammonia.

Telos in KOTOR II would beg you to reconsider, as once you retrieve the shuttle from the military base in the restoration zone (which is clearly a temperate environment), you end up using it to fly to one of the ice caps in order to track down your ship that got stolen from the hangar bay aboard Citadel Station earlier while you were quarantined until the authorities could confirm your story about what happened at the mining facility from the start of the game.
