the NIST reference lab is extremely important, and yes. even in disease research. manufacturers contract work out to them in order to manufacture products to a given spec. so, for example, manufacturing PB so it doesn't get people sick.

i know its difficult to understand that 100% of all scientific research is not "curing diseases". However, watch the video and broaden your understanding of the importance of reference material. nearly everything you own relies upon it

The purpose of this peanut butter is so that you have a "pure" sample of peanut butter to compare it to a scalable industrial process.

Let's say you wanted to make a 50% peanut butter 50% chocolate cookie. You get your chemistry grade chocolate and peanut butter and make a cookie. Then you make the exact same cookie using wholesale common ingredients and you can compare the industrial cookie to the pure chemistry grade cookie and know what kind of impurities you have because of the control cookie.

As the label says, it's not intended to be eaten.

We actually do this for everything, and it is extremely important. You would be amazed how many lives this kinda stuff saves regularly.

It's used to check and insure the accuracy of basically everything. That way we can know that our food is safe, that our blood tests can be trusted, our medicine is safe, that our building materials are strong and stable, etc.

Literally everything depends on these standard reference materials.

It's kind of an expensive gimmick to make everything out of reference material so I don't think there's any more videos like that. I'd say though that he made a few obvious mistakes.

  1. That chocolate was probably 100% dark. He should have melted it together with cocoa butter, a little milk, and sugar to make some sweeter chocolate chips. He didn't do that though so the chips would have been extremely bitter.
  2. He totally fucked up the vanilla extract. I have no idea if the amount of vanillin used was correct but vanilla extract is only like 30% alcohol. He used entirely pure food grade ethanol. Not only does this fuck up the flavor of the vanillin but ethanol, when baked, will actually suck the flavor out of things. This is why some recipes will recommend emulsions over extracts.
  3. They had no binding agents. Probably would have come out better if they added a little xanthan gum or locust bean gum.
  4. Not really an expert here but that egg did not look right and they probably needed more sugar. Also if it were up to me I would have used egg yolk powder instead of whole egg powder.
It probably wouldn't have come out great regardless but there was definitely room for improvement.
