I'd like to try them someday. Apparently they are pretty good.

Birria tacos are my favorite style right now. If I'm not mistaken they use chuck roast maybe? Is that similar to barbacoa? I have a local joint that has three of them with the dipping broth for 12.99. And you also get unlimited chips and salsa.

In Mexican Spanish, "cabeza" just refers to cooking the entire head of the animal in question, not any particular type of animal.

Cabeza = Spanish for "head"

Haha that sounds good.

I had it the first time at one shop and it's just really well seasoned.
I know people get weirded out about it being intestines and end up never trying it but it's sooo good.
