It's what a lot of people first saw, and grew accustomed to. It's a completely fine and fair sounding translation, and it's beloved as is. She's not a minor character, she uhh... perishes in one of the most iconic scenes in gaming, and people remember her and that scene fondly that way. The was zero need to keep forcing the inferior Aerith spelling in later material

And just so you know, Jupiter, if you keep insisting on using Aerith, I will never date you, which is obvious going by what this topic is about
