It's common for people to act as if lard is an essential ingredient when that didn't exist for probably thousands of years of tamal consumption. The only fat they likely would have had is whatever seeped into the masa from the animal and the game animals eaten were nowhere near as fatty as the pigs today, or even the ones Spaniards brought.
