Like the topic says, we have tried It takes 2 and she enjoyed the beginning, but it quickly got too hard. I thought Mario would be good, but she doesn't want to do Mario exactly, maybe something like Mario. Any recommendations?

Serious answer is Animal Crossing.

Anything that doesn't require precision movement control is key. If you haven't learned how to use a controller as a child, controlling a video game character can feel really unnatural.

Is there a reason she doesn't want to play Mario games? I was gonna suggest Kirby as an alternative but I guess that depends on what she doesn't like about Mario

Seconded. My wife is just finishing up Sandrock and also enjoyed Portia.

Little Kitty Big City was also one she enjoyed.

Lego games are a lot of fun. Just pick whichever franchise you like best (Star Wars, LotR, Pirates of the Caribbean, etc.).

Kirby Forgotten Land is great for people who find Mario difficult.
But my wife only liked The Sims and Animal Crossing.

Skyrim

Potentially Spyro. My wife loves Spyro. She didn't really like games when we first met. I started bringing over my 64 when we were first dating (back in 2003) and she did end up liking OOT to an extent. However, on a Gamecube display at Gamestop, they had one of the Gamecube Spyros playing, I think A Heroes Tail, and she played it for over a half hour. Eventually I got that for her for Christmas or her birthday, both are in December. She loved it so much I got her the 3 ps1 games for cheap at the time, and she played and beat those too.

Overall they're pretty easy, and don't pose a serious problem for casual gamers, unless trying to 100% them. She eventually ended up playing some harder games and got addicted to the 360 with online gaming for a bit!

Donut County. Very easy and cute and simple enough to get a beginner used to video game controls.

If you were going to go with Mario, I think Super Mario World is the most accessible.

Kirby and the Forgotten Realm would be a good choice. Do they have to be games like that? Or maybe a party game like Mario Party?
