7 layer bars are awesome. I use bakers chocolate, unsweetened coconut and evaporated milk to lower the calories but this leaves a staggering amount.

Graham cracker layer, chocolate, dried cherries, nuts, shredded coconut, pourover evaporated milk sweetened with stevia, sprinkle some Swerve monk fruit on top for browning.

I am wondering if there is a cookie that can be substituted for graham crackers but tastes as good. Should I replace the butter and use a vegetable oil? I use grass fed butter but 100 caliries per tablespoon.

Perhaps olive oil instead of butter and using pepitas for the nuts.

for anything baking, I wouldn't swap out butter for oil. cus oils don't mix and bake the same. if you're making dry baked goods like biscuits, it's fine. but for anything where texture is important (cookies, cakes, etc) you should stick with actual butter or a butter substitute.

you could mix in some unsalted pretzels if you're doing a crushed graham crackers type of thing. it adds a nice flavor and they aren't too high in fat or calories.
i do that when i make cheese cakes and it always turns out really good

The oil would only go into the crumbs for the bottom layer.

Maybe pretzels and olive oil for the crust? I would not want to try it out first as 7 layers bars but maybe as a small cheese cake or custard pie.
