i mixed the shredded beef with a bunch of yummy veggies and aromatics, white onions, green onions, bellpeppers, jalapenos, roasted garlic, cilantro, lime, and some seasonings. melted some shredded cheddar, mozzarella, and pepper jack on them, and topped them with guacamole, shredded iceberg lettuce, tomato, white onion, and guacamole salsa.

served with a side of brown rice and quinoa with Salsa con Queso mixed in to make cheesy rice, and black beans with Pace Picante.

That rice looks like gruel but other than that looks fine. I'm allergic to avocado cuz I'm a bad Mexican but id eat it still.

9/10 Took away one point for guacamole cause I can't stand it. Also took a half point off for the beans not being re-fried, but since 8.5 is an odd rating I rounded up.

Yeah, those need to be refried beans, but otherwise sounds divine. 9/10

thanks you guys! yeah, refried beans would be the more traditional side, but i dunno, i've never been a fan. i do have some bean soup in the freezer i would normally use as a side for something like this, but i had a little bit left of a can of black beans in the fridge, so i just used that instead.

and the cheesy rice might not look too appetizing, but it tastes great. Salso con Queso is sooooooo good.

What brand of salsa con queso do you use? I used to buy Mission brand, but I no longer see it in stores. Brands like Tostitos and Pace taste like cheez whiz

i actually never liked Mission brand and always preferred Tostitos lol. but both are too expensive. i get the Aldi brand now, it's only a couple bucks and it's really good.

Top notch presentation, and the tacos look great.

I am not on board with the idea of 'cheesy rice', so one point off for that.

I assume you use aromatics limes. I believe the limes from Mexico have more fragrance than the limes from Florida.

actually for this I didn't have any fresh limes so I used some bottled lime juice that's been in my fridge for a long time but seems to be keeping good indefinitely. It gets the job done.
