I know a couple places that pool all tips and give it to front and back, and heard mixed reviews from the people at those places. On one hand it is cool that BOH can get the benefit of making more money when busy/rewards getting their ass kicked, but I can also understand FOH employees being pissed that they're not directly getting the money that guests are giving them for their customer service. --- - The user formerly known as WafflehouseJK ... Long time kitchen worker here. Some places have servers "tip out" other staff, having to give up a % of their tips. This is supposed to lead to not-serve staff being more active in making sure serve staff are properly supported by the kitchen, bartenders, bussers, etc. Personally it seems to work tbh. Typically servers make way, way, way more $ per hour than everyone else in the building and while they might have to give up a portion of their tips this way they can typically handle more tables since they can rely on other staff to run food, drinks, clean tables, etc. Keeps everything running at maximum efficiency. The alternatives are either servers have to do all their own running OR making other staff do the extra work anyway. Places that do the former turn over less tables meaning less money for both servers and the restaurant. Places that do the latter cannot keep staff. EDIT: Typically it is something like 2% of sales to the kitchen, 2% of sales to the bar, 1% of sales to bussers, 1% of sales to host stand or something similar. Yes, this is based on gross sales not tips. This means, in fact, if you do not tip at a tip share establishment your server is paying money to other people and not making money off your table. Tip your servers, and if you cannot afford to tip or are too much of a cheapskate you should probably stay at home --- If it was about babies we'd have universal maternal care. There would be no charge no matter how complex the delivery. But its not about babies, is it? ... Copied to Clipboard!
