You can dodge most attacks by dodging into them and to either side (depending on the attack), which also usually forces the AI to stop their long combos. K cups are for single cups, and they get expensive if you're using that many a day. If you want to up his coffee experience, honestly, the best way to do that for the pre-ground-store-buying-casual-drinker is to get them a grinder and whole coffee beans. It's a pretty big difference imo. That plus a decent coffee maker would make me pretty happy. It was just weird for a game that used the space theme so prominently, to ditch it for half a game.
