Maybe that played a role, but the fact that we spoke English also should have clued them in... I saw a Chinese tourist in Japan literally fucking flossing on the subway in Tokyo. Now that being said...I think the ones who act this way, in fact, *do not* act this way at home...when I lived in Beijing for two years, people were generally quite civilized and well-behaved, and you didn't see loud conversations on the subway there.
