I can't say for sure because I've never been but I imagine Texas. Steaks, bbq and mexican. Omfg that's like heaven.
I live in CA. There's nothing specific really about our food here unless your talking about that up it's own ass shit like deconstructed lasagnas and burgers at some pompous neck beard centric bar. The town a bit over from me has all sorts of those things. I'd rather contract the plague than darken the doorway of an establishment like one of those. It's a college town and on Fri and Sat nights there's lines out the door of identical looking white dudes with shitty beards and the same haircut all waiting to get in. It use to be such a nice old town area too. Mom and pop mexicn joints and antique shops. Now it's asian bowls, burger bars and crepes. If all of it and everyone there all burned to the ground nothing of value would be lost.

Louisiana. Beignets, etoufee, boudin, gumbo, jambalaya, Savoie's rice dressing, Zapp's Chips, rice and gravy, red beans and rice, tasso, crawfish, fried alligator, poboys, Tony Chachere's seasoning, etc.

Louisiana cajun food usually involves white rice, a gravy or roux, seafood and shellfish, pork, or chicken. There's a reason so many folks in Louisiana are overweight. The food is killer.

Texas is second.

Hawaii is more about local cuisine than it is about actual Hawaiian staples.

Stuff like fried noodles, chicken katsu, saimin, teriyaki meat, meat jun, kalbi, lechon (kawali), pork adobo, etc. A lot of Japanese, Chinese, and Filipino dishes.

I like trying new things though, and while there's a decent variety here, there's a lot more in large urban centers with more cultures mixing together.

But I just figured that it's better to focus more on its indigenous food rather than just what's most popular and/or common in the area, since any state will have Asian food and whatnot, even if they're known for something else.

Like whenever I have guests from the mainland, we always go to some Hawaiian buffet because everyone wants to try the island flavors. Going to L&L or some other plate lunch place is always second banana; it's poke, lomi lomi salmon, kalua pig, poi, etc. first.

So I mean I'm not saying that Hawaii should ignore everything but Hawaiian food; just that that's what it's known for. And also that I don't like it with a few exceptions :<

There are some things that you'd be hard pressed to find on the mainland though: saimin, local style kalbi, meat jun, misoyaki butterfish, etc.

Wish we had more Italian places down here though. And more variety in general.
