Like, I guess it's a JRPG, but reading about it, it seems to have a lot of WRPG elements, such as the class system.

Should I play it, or one of the earlier ones?

What are some gameplay/mechanic differences?

Well, I do want to play it. But I've only read up on the third one. Are the first two similar? Is there a massive difference in quality or type of gameplay/content?

Except, no, because I literally don't know anything about the other two games. Is it recommend to the play the others first? Does it even matter?

I forget everything about the 2nd game, but imo SD3 is a lot different than Secret of Mana. I like it better, for what its worth.

Co-op is cool too

Secret of Mana has the better characters and story and just overall more charm.

SD3 has the better gameplay.

With that said, play SoM first. It might be hard going backwards.

I never played the previous titles or know anything about them.

I enjoyed Seiken Densetsu 3 anyway. The story is pretty simplistic, so there's no way I'm missing much "lore." The most interesting story was Lise and Hawk (pairs have shared/linked stories), and everything that made them interesting was deeply personal to those two characters and about stuff that happens in this game. Maybe if I knew the prior games, Kevin/"whatever that stupid girl I never use name is" would be more interesting, but it's pretty lame other than the Kevin-specific parts, which...again were about events that occurred in the game.

I really want to try co-op some time.

If you're going to start somewhere then begin with the second one as it's a classic that works well as an introduction to the themes and fauna of the series. Then you can go into Seiken Densetsu 3 which expands on the second as well as offer significantly more replayability with it's class system and multiple selectable characters.

The only other game in the series I've ever played was Children of Mana, it was ok but nothing special but the music was pretty good though.
