They just slice it without slicing all the way through it. Have you ever made a hoagie sandwich before? Have you ever worked at subway? Its quite simple. Please dont ever aspire to be a chef

I've heard that they use a spinning machine with a circular blade that's coated in an oil before the dough is baked. After baking, since this slit has oil in it, then what happens is that the baking does not fully close up the slit made.

I might be wrong, but I think this happens as the dough passes through a multiple lane conveyor belt because if you look at how the buns are packaged, the slits in one column of buns face the slits in the next column of buns.
