It is entirely based on whether it is below or above the surface, IIRC.

Lava is above ground. Magma is below.

Magma is hotter because it is below ground.
Lava is colder because the surface air cools it down.

That seems wrong to me. Wouldn't there be pockets of water and air in some places under the surface that would result in lower temperatures? I'm fairly certain the entire definition is just whether it is below or above surface level.

Yeah, it's just the difference between what's above or below the surface.

Which would still create water vapor trapped in the caverns, no? Not only that, but I wasn't talking about just water touching magma, but pockets of water underground that might affect the temperature of the surrounding rock, which may touch magma filled chambers.

Still, the underground is not 100% airtight across the entire planet, obviously.

Iirc there was a recent study suggesting there's oceans of water in the mantle

If you fall in it, all rhe moisture in you, which is most of what you are, instantly vaporizes, so you actually explode.

I mean, it would make sense given the whole process of land creation is basically just a big fucking wheel of rock and water and magma.

It's one of the easiest distinctions to make, lol.

It's more relevant to geologists to make that distinction though. Doesn't really matter in most contexts for us to mix up the two, but at the same time it's so hard to screw it up.
