Depends on the cut - well done works on hard, thin cuts that warrant a thick marinade. If you want it rare or medium it'd have to be done in, like, a pressure cooker or something.

Best way to cook steak is to put into an immersion cooker for rare/medium rare, then finish it off in a super hot skillet to sear it.

the whole reasoning being (as I understand it) that bacteria/mold really can't get past the outer layer of the steak after it's been cut, which is why it's ok to cook at rare temp - the inside of the steak was safe and the outside gets cooked so bacteria/mold is killed.

Hamburger, on the other hand, should always be cooked to well done since when the meat is ground the bacteria gets mixed in with the rest of the meat - so the only way to be sure it's killed is to reach well done temperature.

Of course, people have been eating medium rare burgers for ever and in MOST cases never have worse than the "Damn, last nights meal didn't agree with me"

As long as the food reaches a certain temp it should be fine. You don't have to actually cook it medium well or even medium for that
