Not rice dish, but the type of rice itself.

Yellow? Brown? White? Jasmine? Forbidden? Spanish? Wild?

I like pretty much all types, but I think Jasmine (the kind they serve at Chinese restaurants) is my favorite. I really like jambalaya rice, though. Yellow rice is a perfect side for pork dishes.

I'm very fond of Forbidden Rice, myself. The flavor and texture is nice, and it's a very versatile little variety. Plus, the color is very striking.
Also very fond of this bamboo-infused jade pearl rice I found at work(Whole Foods). Needless to say, it's pricey, but it gets gooey without being very sticky, if that makes sense.

At the end of the day, I like rice in general.

Basmati rice is it's not even fucking close.

Specifically used for Persian rice or saffron rice. Or even a good fried rice.

edit: It cooks up fluffy, it doesn't break up and become a sticky starchy gloppy mess. It can be used in and dish where the rice needs to maintain its individual grain. It tastes better, lighter, airier . . . it's easily the best.

white. Specifically, Calrose rice. It's a medium grain. Great texture/taste.

When steaming it in a rice cooker or crock pot hybrid, add into the water about 1 tbsp of white vinegar and 0.5 tbsp of salt. Top with misc peppers (poblano / anaheim) then fire up and sit back.

Depends on what I'm eating with it.

Curries that use coconut milk (usually Thai): long grain sticky rice

Chinese or other Southeast Asian cuisine: jasmine rice.

Local or Japanese foods: short grain rice.
