Not sure what to call it.
Why do they do that, though?

The same reason why people always consolidate Mayo, for the sake of Mayo.

It basically optimizes pages for mobile, so rhey load faster and ads aren't as big.

Seriously though Google is about to get fucked by the government sooner rather than later, if I had to bet on it. That's why they split their company into Alphabet as a way to protect themselves. I think Yelp is the best example of something that Google is trying to throw out, basically you see Google reviews when you search and never have to leave Googles page. Increasingly when you search you will see smart information cards that keep you from having to actually go anywhere but Google for the information you want. Now Google is just putting articles behind their own trackers to monetize that behavior as well.

Google Flights also come to mind as a competing directly with companies like Kayak / Priceline etc.

It's basically the drive for better returns, greed, power.. capitalism.

But the page owners have to choose to do it, google doesn't just steal their traffic. I'm guessing it all counts as a hit for the site, regardless.

The worst part about it is how it fucks up the links and it refuses to acknowledge that desktop is not a mobile device and switch to the normal layout. Most mobile links that do this can be fixed by just removing the "m." or "mobile." at the start of the link (though that's still bad site design), but AMP links just completely fuck it up to the point you just have to hope you can find the article yourself.

Every page has a paperclip icon at the top that links you to the original article.

It also allows you to literally page swipe from one article to the next.

AMP pages are supposed to have the canonical URL in the meta tags.
