I prefer video game "remakes" to be "re-imaginings". A different take on the original source material.

Example of a "graphical update" remake would be, Link's Awakening.

Example of a "re-imagining" remake would be the Resident Evil 2 Remake, or the unreleased FFVII remake.

I liked HeartGold and SoulSilver. It stayed true to the original and had cool new things too.

Second option easily, if you like the original then you should play the original.

The only exception would be the aforementioned quality of life improvements but no changes should ever be a detriment compared to the original like what they did to the Majora's Mask remake for example and to a lessor extent the Halo CE remaster.

Highly dependent on the game. If I didn't think much of the title to begin with, I probably wouldn't mind a different take. If it was already a masterpiece, it's probably something I'd like to see just prettied up.

That said, I'll generally prefer the graphical update scenario since I'm already guaranteed to like the game.

I like when remakes add something new without completely changing the game.

Graphical improvements and/or quality of life changes. New sidequests and expanded story is nice too. Not interested in huge changes.

Hard to say. In general I'd like them to update it without losing the spirit of the original. Like Firered/Leafgreen which added in a bunch of changes to Red/Blue but, at the same time, kept things faithful to the original. Some games have some serious shortcomings that need addressing but changing too much can be just as bad. So it's really sort of a balance.

Like, imagine if they remade FFI and updated it to be a full-on 3-D release with modern graphics, gameplay, and everything. At that point why not just make it a whole new title? At the same time, releasing it as a 2-D title and making sure everything is cleaned up, functioning well, and generally improved... well..

Graphical updates with minor adjustments to anything outright broken in the original. Re-imaginings are far worse 95% of the time and ends up just leaving you frustrated.

It's a remake if they redo the assets/engine, remasters are done to the original assets. Remake with redone graphics is obviously what the OP meant given that he listed Link's Awakening.

I've never cared for graphical updates, but I'm a fan of remakes when the original is hard to play now because of technical limitations.

Depends on the game. Stuff like Pokemon FRLG probably falls somewhere in the middle. I'll also note that I really liked LBW, which took the reimagining a step further and pushed it as a separate game.

If it's a game I already own a copy of, then a remake will generally have to add something more substantial than a graphical upgrade for me to want it, though "reimagining" is a bit of a strong word for that. I was a big fan of WWHD for the way it addressed some of the original's more crippling flaws and turned it into an amazing game, despite not changing all that much content. If it's a game I don't already own, I kind of prefer simple graphical updates because they tend to be cheaper, unless the original's gameplay is too dated to be enjoyable now without some tweaks.

The thing about the MM "remake" is they kept 99% of the game the same (graphically too) but made some changes for changes sake that most agree were for the worse.

Hard to say. The only "remakes" I've played are actually remasters. Even the Crash and Spyro trilogies, despite the graphic updates are remasters. These work though and I've no issue with them. What Final Fantasy VII remake is doing will be the first time I've played a remake of a game. Although I've never played the original so I can't say what will be better.

Ya, I liked the MM remake for the most part... but it bugged me that they changed Odalwa's chant... since it did sound like he was shouting ODALWA!!! ODAL~~~WA!
